The Paella is one of the best known dishes in Spanish Cousine. It is a highly seasoned seafood and chicken dish prepared in a shallow pan. Most Latin cooks do not follow a recipe. My choice of fish varies with each Paella. But, most importantly, I use beer to cook my rice! This is my all time favorite dish. The mouth watering aroma of the seasonings fill the house while it is cooking!...ahhh... I decorate my Paella with green peas and roasted red bell peppers. This is truly a Feast....Of course, don't forget the WINE(and Flan for dessert)
