Usually we make this meal with Steak ((topped with Onions cooked in balsamic vinegar and melted blue cheese on the top)) and a Caesar Salad.

Twice Baked Potatoes and Blue Cheese Steak
4 Large Potatoes 1/2 Sour Cream
4 Slices of chopped cook bacon Optional: Garlic
1/2 Shredded cheddar cheese
1/2c. Cooked broccoli chopped
1/4 tea. Ground Lemon Pepper Seasoning
Scoop pulp out of the potatoes into a large bowl. Mash with potato masher. Add rest of ingredients. Mix well. Fill potato shells with mixture. Top with cheese and scallions. Broil until cheese is melted.
Steak:
1 lg. Onion Sliced 1/2c. Balsamic Vinegar
Saute onions in a frying pan, deglaze with vinegar. put on top of steak and crumble blue cheese. Melt under Broiler.
