Popeye's Brownies
(don't knock 'em 'til you try 'em!)
In keeping with following a healthier diet and getting some more veggies into the children, this recipe is right up there as one of our new traditions. The brownies DO NOT taste like spinach...and yet, they are very chocolaty...they have a "fudgier" feel to them...so just tell them it's fudge!(I also use canned pure pumpkin
(not pumpkin pie filling) ..aha I am a master of
deception)
All you need is a 1 lb bag of frozen spinach and a box of brownie mix....(no eggs no oil!)
Puree the thawed spinach with its own juice.Mix the spinach puree and the brownie mix until all is blended (do not overmix). You will probably need 2-3Tbs of water added depending on where you live to make it easier to blend. Start with 1Tbs then 2 Tbs. But remember that if the batter is too wet, the brownies
will be too soft. Spray your pan with cooking spray and bake at 350 for around 40min.


They will be softer and chewier if you use a brownie pan and harder and crispier if you spread the batter more thinly, like in a casserole dish. You will have to experiment to see which works better for you. I like them fat and chewy .


And don't tell the kids there is spinach in them!
