For the week 2 challenge I present our family recipe for Vegetable Soup.

In reality all the left over veggies, at the end of the week go in this one, but you get the idea :-)

- 1kg of your favourite mixed root vegetables (carrots, celery, leek, onion, potato, etc)
- 75g butter - salt and pepper
- 2 cloves of sliced garlic and a bay leaf
- 300ml vegetable stock.

Prepare the vegetables and slice them up.
Heat the butter, in a large pan and add in the veggies, garlic, bay leaf and a little salt and pepper.
Stir well and cover it up with a pan lid for 15 minutes over a hot hob, stirring occasionally.
Add your stock, bring to the boil, then cover and allow it to simmer for 30 minutes until the vegetables are perfectly tender. Remove the bay leaf.
Taste your soup and add salt and pepper to your liking
It’s ready to dish up!
