Recipe:


Sugar Cookie Crust:
1 egg
1/4 cup sugar
1 pinch salt
1 1/2 cups flour
1/2 cut butter, cut in pieces
vanilla


- In small bowl, mix egg, sugar, & vanilla
- In separate bowl, combine salt & flour. Cut in butter. Stir in egg mixture then knead dough into a smooth ball. Refridgerate for 15 minutes.
- Roll to 1/8 inch thickness and place in pie plate.
(If pre-cooking, bake for 20 minutes at 400 degrees)



Filling:
3/4 cup brown sugar
1/4 cup flour
3/4 tsp cinnamon
nutmeg to taste
7 medium apples, peeled, cored, and sliced
1 lemon, zested and juiced
Egg wash


- Preheat to 450 degrees
- mix sugar, flour, cinnamon, & nutmeg in a small bowl. In another bowl, sprinkle apples with lemon juice and toss. Stir in sugar mixture to evenly coat apples.
- Mound mixture into pie pan. Dot with cubed butter. Cover with top dough.
- Brush top with egg wash and sprinkle with cinnamon and sugar.
- Bake for 45 minutes.
