Zucchini Bread
1 cup oil
2 cups sugar
3 eggs
1 Tbsp vanilla
2 cups shreddded zucchini
3 cups flour
1 tsp baking soda
1 tsp salt
1 Tbsp cinnamon
1/4 tsp baking powder


Combine oil, sugar and egg in a bowl and mix well. Blend in vanilla and zucchini. Sift together dry ingredients and add to oil mixture. Pour into 2 greased and lightly floured loaf pans. Bake at 350 for 1 hour or until done.
