My spelt and honey cookies are my absolute favourite treat to stave off the winter cold. It’s a simple recipe that I created myself. At first I used maple syrup to make them, but through the years I gravitated towards honey instead. When I lived in Australia, I took these photos and as you can see, I went through a LOT of maple syrup bottles from Canada! Even in the high heat of their summer, to me December meant cookies as my comfort food.
