Meatloaf Cordon Bleu
Ingredients:
2 lbs extra lean ground beef
1 cup Italian seasoned breadcrumbs
1 small onion, chopped
2 eggs, beaten
4 ounces thinly sliced ham
4 oz. sliced provolone cheese
garlic powder, salt, pepper to taste
1 jar (16 oz.) meat sauce
Directions: Preheat oven to 350 degrees F
In a bowl, mix together the ground beef, bread crumbs, eggs, and onion and season to taste with garlic powder, salt and pepper. Pat the meat mixture out onto a piece of aluminum foil, and flatten to 1/2 inch thick. Layer slices of ham onto the meat and top with provolone cheese (you can substitute Swiss cheese if you prefer). Pick up the edge of the aluminum foil to roll the flattened meat and cheese into a log. Remove the aluminum foil. Seal all the seams. Put sauce in bottom of the pan. Cover with aluminum foil. Cook for 1 hour and 15 minutes or until not pink in the middle.
