Recipe:
Beat 3 Eggs with
1 cup oil
2 cups sugar
1 teaspoon vanilla 
Beat until thick and foamy (use stand mixer, level 6 or 7)

Combine (in large bowl):
2 cups grated zucchini (drain, squeeze zucchini, 1 super large zucchini 12"x3"dia or 2-3 regular zucchini 9"x1.25"dia)
1 can (8 1/4 oz) drained crushed pineapple

Combine (dry ingredients and spices only, use separate medium bowl) 3 cups flour
2 teaspoon soda (baking)
1 teaspoon salt 
1/2 teaspoon baking powder 

1 1/2 teaspoon cinnamon 
3/4 teaspoon nutmeg

1 cup raisins (optional)
1 cup nuts chopped (optional) 

Stir dry mix into zucchini mix (with spatula)

Bake 1 hour at 350 deg F, use loaf pan

My additional notes: for double recipe use extra big bowl, Double recipe makes 2 9x13 = 55 min or 2 8x12 = 45 min, fill no more than 3/4 full, can use rest in standard muffin tins 350 deg F at 20-25 minutes.
