I have always been a huge believer that the way to a man’s heart is through his stomach, so the first time I had the chance to invite my
fiancée over for dinner I just had to! It was only a few days into our relationship and I wanted to treat him with something special.
I knew he loved Mexican food so I decided to make one of my family’s favorite casseroles, CHICKEN FRITO CASSROLE.
It has just the right amount of spice and crunch and it always got good reviews from friends and family in the past.
I spent the afternoon preparing and creating my family’s specialty, praying and hoping that Eric would love it. When the time came,
not only did he love it, but I truly believe the saying is right and I won his heart right there.
He kept telling me I was one of the best cooks he has ever known and if I kept cooking food like that for him he would gain 100 pounds.
Now we are engaged to be married and he still requests this family casserole from time to time and it has become one of his all-time favorites
and always brings back memories of our first real dinner together.
