DATE NUT BREAD
1 1/2 c boiling water
1 c chopped, pitted dates
1 1/2 c sugar
1 egg, beaten
2 1/4 c sifted flour
1/4 t baking powder
1/2 t salt
2 t baking soda
1 c chopped nuts
1 T melted shortening
1 t vanilla
Pour water over dates. Let stand 10 min. Add sugar gradually to egg and beat. Sift together dry ingredients and add nuts. Add date mixture alternately with dry ingredients to egg mixture. Add shortening and vanilla. Pour into WELL GREASED, parchment-lined loaf pan or 3 mini loaf pans. Bake at 350 degrees for 60-75 min. for loaf pan or 45-50 min. for mini pans. For an election night themed party, the bread was baked in a sheet pan from which donkeys and elephants were cut; adjust baking time as necessary. Spread with pink or blue cream cheese. 11/5/16
