JOURNALING:  As usual, we waited until the last minute and weren’t able to get our first choice for Easter dinner.  We had been to The Great Outdoors Restaurant in High Springs for an Easter buffet several years ago so ended up making reservations there.  Unfortunately, they didn’t have an Easter special this year so we just ordered off the menu.  Jim had Southern Cajun Redfish with fried green tomatoes, Gouda grits, onion rings and fries; I had a salad of organic field greens, dried cranberries, roasted pears, spiced walnuts and coconut crusted tofu. The food was OK, just not exactly the special Easter repast we had hoped. The closest we got to “Easter” was the wood bunny stuck in a planter just outside the front door.
