Journaling reads: At Bakers Square, the dish started wtih a fire-roasted potato medley, grape tomatoes, and spinach and then topped with 2 poached eggs. I eliminated the hollandaise sauce but kept the topping of avocado and scallions. This was a yummy and healthy way to start the day.
